Soup with rice balls

 

Here is a soup recipe, whether you are a vegetarian or not, you would like it. It has rice in it, so it is fulfilling too.

 

SOUP WITH RICE BALLS:

 

Ingredients for the soup-

1)      2 tbsp butter;

2)      1 onion, chopped;

3)      2 potatoes, diced;

4)      200g mushrooms, chopped (reserving a few of them);

5)      2 tbsp flour;

6)      2 cups water;

7)      1 bay leaf;

8)      salt and pepper to taste;

9)      2 cups milk; and

10)  1 soup cube.

 

Ingredients for the rice balls-

1)      ½ cup cooked rice;

2)      2 tbsp grated cheese;

3)      4 green chilies, chopped;

4)      6 flakes garlic, chopped;

5)      1 tbsp chopped coriander leaves; and

6)      salt to taste.

 

 

TO PREPARE THE SOUP:

 

 

Melt the butter in a pan, fry onion till translucent. Add potatoes and mushrooms and sauté for two minutes. Stir in the flour. Gradually add the water, stirring constantly. Add bay leaf, salt and pepper. Cook for 15 minutes. When cool, discard the bay leaf. Blend the cooked vegetables to a paste. Add milk, sliced mushrooms and soup cubes. Bring to a boil.

 

 

TO PREPARE THE RICE BALLS:

 

 

Mix all the ingredients and shape into marble sized rounds. Deep fry the balls in hot oil till done.

 

 

YOUR SOUP IS READY. Serve the soup hot, topped with rice balls.
